Full of healthy fats, this recipe contains only 4 grams of net carbs per serving!<\/p>\n<p>Prep Time: 30 minutes<br \/>\nResting Time: 30 minutes<br \/>\nTotal Time: 35 minutes<br \/>\nYields: 4 servings<\/p>\n<h2>Nutrition<\/h2>\n<ul>\n<li>Calories: 176<\/li>\n<li>Fat: 13 g<\/li>\n<li>Saturated Fat: 2 g<\/li>\n<li>Total Carbs: 8 g<\/li>\n<li>Net Carbs: 4 g<\/li>\n<li>Protein: 7 g<\/li>\n<\/ul>\n<h2>Ingredients<\/h2>\n<ul>\n<li>For the \u201cpasta dough\u201d\n<ul>\n<li>1 cup almond flour<\/li>\n<li>3 tbsp coconut flour<\/li>\n<li>2 tsp <a href=\"https:\/\/www.amazon.com\/Bobs-Red-Mill-Xanthan-8-ounce\/dp\/B0013JJZWG\/ref=sr_1_13?keywords=Xanthan%2Bgum&amp;qid=1557947070&amp;s=gateway&amp;sr=8-13&amp;th=1\"><b>xanthan gum<\/b><\/a><\/li>\n<li>1\/4 tsp kosher salt<\/li>\n<li>2 tsp apple cider vinegar<\/li>\n<li>1 egg, beaten lightly<\/li>\n<li>2-4 tsp water as needed<\/li>\n<\/ul>\n<\/li>\n<li>For cooking\n<ul>\n<li>1\/4 butter as needed<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>4 cloves of garlic, thinly sliced<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h2>Equipment<\/h2>\n<ul>\n<li>Food processor<\/li>\n<\/ul>\n<h2>Instructions<\/h2>\n<ol>\n<li>Add the almond flour, coconut flour, xanthan gum, and salt to the food processor. Pulse until thoroughly mixed.<\/li>\n<li>While the food processor is running, add in the apple cider vinegar and mix well. Add the lightly beaten egg.<\/li>\n<li>Add water, teaspoon by teaspoon, until the dough forms into a ball. The dough should be firm but sticky with no creases. Creased dough is a sign the dough is too dry; if this happens, simply add a teaspoon of water.<\/li>\n<li>Wrap the dough in a cling film and knead it through the film for a couple of minutes. Allow to rest for roughly 30 minutes in the refrigerator.<\/li>\n<li>Cut dough into 4 pieces and roll into evenly sized log shapes. Slice into evenly sized pieces.<\/li>\n<li>Press each small piece with your thumb against your other palm making each piece of orecchiette to your liking. Store in the freezer for 15 minutes.<\/li>\n<li>To cook your pasta, heat the butter and olive oil in a large pan over low heat. Once warm, add the garlic and cook until a light brown color, add in the orecchiette from the freezer, and baste immediately.<\/li>\n<li>Continue cooking until the pasta starts to brown which approximates an al dente consistency.
