Cottage Cheese Pancakes with Berries

Ingredients

  • 2 eggs
  • 3.5 oz cottage cheese
  • 1/2 tbsp ground psyllium husk powder
  • 1 oz avocado oil
  • 1/4 cup fresh berries

Directions

  1. Crack eggs into a bowl. Mix in cheese and husk powder. Let sit for 10 minutes to thicken.
  2. Heat avocado oil in a frying pan on Medium Heat. Scoop out and flatten the batter onto the skillet in small circles, 3-4 inches in diameter. Cook until golden brown on the bottom (no more than a few minutes) flip and repeat.
  3. Serve with fresh berries over top.
